Pasta with Creole sauce

§  250 grams Penne
§  3 tablespoons Olive oil
§  2 tablespoons chopped Ginger
§  crushed Garlic(6 cloves)
§  salt(according to taste)
§  3 large sliced(thickly) onions
§  4 green chilies(cut Diagonally)
§  1 ½ chopped tomatoes
§  1 spring thyme(fresh)
§  1 teaspoon chopped parsley(fresh)
§  1 tablespoon chopped coriander leaves
Method-
§  Take a pan and boil the pasta in water.  Add salt in water during boiling.
§  Now drain pasta and keep sideways.
§  Take another pan and add olive oil and heat up.
§  Add chopped ginger, onions and cook for 2 minutes.
§  Add small chopped tomatoes, green chilies and stir.
§  Add boiled pasta to the sauce.
§  Add parsley, salt, fresh thyme, coriander leaves and mix it nicely.
§  You can add some water if the mixture seems too dry.
§  Sprinkle the left over olive oil and serve.
