Rava or suji{ Semolina}-1 cup
Wheat Flour (Maida) -3 table spoon
Baking Soda-1/4 tsp

INGREDIENTS FOR PANI
Tamarind - Pulp -1/2 cup
Water-2 cups
roasted Cumin Seed Powder -2 tablespoon
Some Coriander Leaves
Green Chilly- 3
Mint Leaves Chutney-2 tablespoon
Black Salt-1 tablespoon
Jaggary - 2 tablespoon
Water-2 cups

METHOD FOR PANI
Mix all the ingredients and spices. Adjust tanginess for taste. Now strain it to remove rough bits.
METHOD FOR PURI
Take a big bowl and add flour, rava,salt, baking soda and water to make a soft dough. Cover it with wet cloth and keep it aside for 20 minutes. Make small balls and roll it into thin rounds. You can use flour or rava while making thin rounds. Heat oil and deep fry thin rounds till it turns into brown and crunchy. Take out puri on a paper towel to drain out excess oil. Now store these puries in airtight container after cooling it.
